Jicama has got to be the most delicious tuber ever.

Jicama-Grapefruit Salad

1 jicama, peeled and cubed
1 green pepper, diced
1 grapefruit, peeled and sliced
1/2 small red onion
Salt and pepper to taste

Dressing: olive oil, dijon mustard, agave, juice of 1 lemon

When peeling the jicama, be sure to remove about 1/8″ of the outer layer (skin and fibrous layer just underneath).

Mix together, dress, toss.  Alternatively, this would be delicious with oranges, limes, and cilantro.

Total cost: About $4 for everything, or $1.33 per person for each of the three of us (and filled a large bowl).
