3 medium sized beets, grated
1/2 medium sized yellow onion, chopped
4 carrots, grated
2 teaspoons Dijon mustard, or to taste
Salt and freshly ground black pepper
1 T extra virgin olive oil
2 T sherry or other good strong vinegar
1 T minced peeled ginger
1/4 cup chopped cilantro leaves

Peel the beets and carrots; either grate or food process until shredded.  Mix in a large bowl with the chopped onions, ginger, salt, pepper, mustard, oil, vinegar, and cilantro.

Total cost: About $5 for everything, or $1.67 per person.
